When using a Reference Data source to pull in additional data, should I use the Simple Replacement / Normalization task or the Infer task?  

Simple Replacement is a simplified version of the Infer Task. The Infer Task allows for multiple matching attributes while Simple Replacement allows for only one matching attribute. So you can use either task depending on your requirements.
